- 650 g harina de fuerza
- 200 ml leche tibia
- 120 g mantequilla derretida
- 120 g azúcar
- 50 ml zumo de naranja
- 25 g levadura fresca
- 2 huevos
- 10 g sal
- 2 cdas agua de azahar
- 1 naranja (ralladura)
- 1 limón (ralladura)
- Para decorar:
- 1 huevo
- 200 g fruta escarchada
- 50 g perlas de azúcar
- 50 g almendras laminadas
- 2 figuritas horneables
- 2 habas

- En un recipiente añadimos 25 g de levadura fresca desmenuzada, un poco de los 250 ml de leche tibia, 3 cucharas de la harina de fuerza y lo removemos todo. Tapamos y dejamos fermentar unos 20 minutos en un lugar cálido.

- En un bol grande añadimos el resto de la harina tamizada y vamos añadiendo el resto de ingredientes: azúcar, ralladura de limón y naranja, sal, leche tibia, zumo de naranja, 2 huevos, el agua de azahar, la mantequilla derretida y la masa de pre-fermento que teníamos en otro recipiente fermentando. Removemos hasta que quede una masa homogénea.

- Enharinamos una superficie lisa, y amasamos durante unos minutos. Si es necesario le añadimos un poco más de harina para poder trabajar bien la masa. Le vamos dando forma de bola a nuestra masa, y una vez bien amasada, la guardamos en un recipiente y la tapamos con un paño. Dejamos fermentar la masa durante un par de horas en un lugar cálido y sin corrientes. La masa debe doblar su tamaño.


- Sacamos la masa del recipiente y en una superficie lisa enharinada, la amasamos de nuevo, la separamos en 2 partes, y poco a poco le vamos dando forma a nuestro roscón. Saldrán 2 roscones.


- Los roscones dejamos reposar durante aproximadamente 30-40 minutos, tapados con un paño y en un lugar tibio. Cuando se leudan, podemos añadir las figuritas y habas.

- Pintamos los roscones con huevo, y los decoramos a nuestro gusto, con fruta escarchada, naranjas confitadas, almendras laminadas, azúcar perlado.

- Una vez tenemos nuestros roscones de reyes decorados, los metemos en el horno precalentado a 180°C durante unos 25-30 minutos, dependerá del horno. Los sacamos del horno y los dejamos enfriar sobre una rejilla.

- Una vez enfriados, podemos cortarlos por la mitad y rellenarlos de nata, crema trufa o nuestro relleno favorito. A mí me gustan sin relleno. ¡Buen provecho!
